The Tortilla Industry Association will offer its Hands On Tortilla Production Training in conjunction with its annual convention for the first time, TIA announced in its Oct. 14 Industry Report. Both take place at Planet Hollywood in Las Vegas. The convention itself runs May 26–27, 2027, according to TIA's convention page, and the course runs a few days longer, through May 29.
The course pairs classroom theory with practical work. Classroom sessions are scheduled for the mornings of May 26 and 27, followed by a full lab day on May 28 and a half day on May 29, when students mix their own dough and run it through a commercial tortilla oven. Both flour and corn tortillas are covered. Graduates get a certificate, and course materials come on a USB drive in English and Spanish.
Tuition is $795, the same as TIA's stand-alone classes held around the country, and it now includes a convention pass covering the poolside reception, daily lunches, expo hall entry on both afternoons and the sponsored drink carts. TIA's convention page lists registration as coming soon. Its hotel page lists a $105-a-night rate at Planet Hollywood with no resort fee, with a May 8 booking cutoff. TIA directs course questions to jkabbani@tortilla-info.com.
