BakingTECH 2026, the American Society of Baking’s annual conference, ran Monday–Thursday, Feb. 16–19, at the Sheraton Grand Chicago Riverwalk (301 E. North Water Street). ASB positions the meeting as a technical solutions and networking week for more than 1,000 grain-based food professionals — schedule and registration pages remain at asbe.org/bakingtech2026.

Programming mixed mainstage keynotes, technical breakouts, Ideation Labs, ASB Next! Stage podcasts and BakeTALKs, and the Formulation Floor — ASB’s tabletop exhibit where ingredient, equipment, and service partners meet bakers. Pre-conference workshops covered sensory evaluation and FSPCA Preventive Controls 2.0 updates for PCQI-qualified individuals.

For tortilla and flatbread plants, the value is concentrated peer and supplier time on formulation, shelf-life, process control, and line efficiency without waiting for the next IBIE. The Formulation Floor is the practical shopping and sampling block between CapEx RFPs.

Looking ahead: ASB lists BakingTECH 2027 for Feb. 21–24 at the Hyatt Regency Atlanta, and BakingTECH 2028 for Feb. 21–24 back at the Sheraton Grand Chicago Riverwalk (asbe.org/bakingtech). Mark Atlanta if your R&D or ops calendar needs a winter 2027 tech stop.
